If it is deprived of oxygen, it can fail, leaving parts open to pitting (where rust and decay gets in under the surface and is often undetected). It is also important to be certain that the stainless steel you purchase is high quality. If the film has been prevented from forming by contact with other metals, stainless steel can rust very rapidly.
